Amped Up Beanie Weenies

Trying to get enough fiber on a typical American diet can be difficult. Alas! The mighty bean is here to save the day! But seriously, they are really great for your digestion. This meal comes with lots of protein and fiber as well as a good dose of vitamins A and K from the sweet bell pepper and Swiss chard. Pair it with a side of paprika cauliflower and you’re good to go.


I’ve been throwing the chard in every dish I can think of because I grow it myself in my little raised garden beds and I have it coming out my ears by now! But the flavor is so mild it can be added to almost anything for a little extra green boost. We all know we should be eating our greens, but sometimes they are hard to pack in.

I like to take a dish I already like and add them in instead of trying to come up with brand new recipes that feature greens. Much easier that way! And my kids tend to miss the fact that the green stuff is present when they are in a dish they already love.


So, back to this bowl of goodness…

Embrace your inner five year old for just a moment and imagine a big bowl of beanie weenies. I used to love them. But I’m all grown up now and my palate is a little more refined.

Enter Amped up Beans with Turkey Sausage, Peppers and Chard with a side of Paprika Cauliflower. Sound delish? Yep, that’s because it is. And it lets you satisfy that little kid within.

Recipe for…Amped Up Beanie Weenies

2 tbs olive oil

1 small onion, chopped

½ green bell pepper, chopped

1 clove garlic, minced

2 cups Swiss chard (or spinach)

1 package turkey sausage, sliced into 1” chunks

1 can Bush’s Best Country Style Baked Beans 

Heat olive oil on medium high heat in a large skillet and add the onion and bell pepper to the pan. Cook until softened, about 5 minutes. Add garlic and turkey sausage to the pan and sear the sausage, about 5 more minutes. Add the chard and cook another minute or two more until it is wilted. Pour in the can of baked beans and heat until bubbly.

Recipe for…Paprika Cauliflower

2 cups cauliflower florets

1 tbs olive oil

¼ tsp salt

½ tsp paprika

If you are making the cauliflower to eat with the Amped up Beanie Weenies, begin by preheating an oven to 410OF so this can cook while you prepare the bean dish. Cut a small cauliflower head into florets and toss in a bowl with olive oil and salt. Place onto a parchment lined baking sheet and sprinkle with paprika. Bake for approximately 15 minutes until tender.
