My Favorite Snack

Sometimes you just want something in between meals or to finish off a great dinner. Here’s the rule I try to live by: my food should have some nutritional value. I need to be getting the good stuff out of the things I eat, not stuffing my face with empty calories that don’t fuel my daily activities. I like to take walks, I like to garden, I like to go to ball games and watch my kids play. I can’t do all this if I’m drained. I would say about 90% of what I eat has the stuff in it to make my mind clear and my body energized.

Today I’m sharing with you a little jewel. And I don’t feel guilty not one little bit when I indulge in this peanut buttery fluff. Because it has protein from the Greek yogurt to build my muscles, fat from the peanut butter to make my brain function, trace minerals from the honey, and even antioxidants in the dark chocolate. How’s that for nutrition?


When I stir this up, I believe it looks just like the inside of a peanut butter pie! Something about the combination of these ingredients gives it such a luxurious texture. And those few little mini dark chocolates on top won’t look like much, but you can taste them in each bite and it makes you feel just a little bit naughty! But no worries, they are scattered like little stars in a Milky Way sky.

If you are trying to scale back on the calories or maybe don’t want to fill up, but just want a little something sweet, try using PB2 instead of the peanut butter. It is made from dried peanuts and has way fewer calories, but you won’t get the protein and good fat that you would with the regular stuff. However, you do still get the fluffy texture.

Recipe for…Peanut Butter Yogurt Fluff

½ cup Greek yogurt

1 tbs peanut butter (try to find the kind with no sugar added)

1 tsp honey

1 tsp mini dark chocolate chips

Stir the Greek yogurt, peanut butter, and honey until all lumps are gone and the mixture is fluffy. Sprinkle chocolate chips on top. Enjoy!
